The disassociation between production and consumption of vegetable and fruit products, in addition to the evolution of the population´ s income level, increasingly justify implementation of a set of operations to enable guarantees as to the freshness, conservation and presentation of the products which reach consumers. This is why this article attempts to analyze the process followed by the fruit and vegetable harvest, when going through the warehouse to try to comply to the set quality standards, while satisfying consumer demand.
